Steamed Salmon with Garlic and Ginger

This steamed fish recipe, given to our family by our Chinese Vietnamese friend Uncle Su, is special. During cooking, the bold seasonings mix with the sweet fish juices to create a wonderful sauce for flavoring the flesh and a bowl of hot rice. Fresh salmon steaks or fillets are a fine substitute for the heads, which my parents prefer. You can also try the sauce atop other moderately flavored fish that have some richness to their flesh, such as sablefish. Avoid lean, dense fish, such as halibut or swordfish, which dry out and toughen when steamed.

Mellow Chile-Garlic Mix

When definitive heat is what you want in a dish, fresh chiles are what you add. But when you want to inject subtle spiciness and preserve the delicate nuances of a dish, this aromatic mixture is the solution. I grew up with this condiment on the family dinner table, where it sat in a small jar alongside dispensers of fish sauce, soy sauce, salt, and pepper. Its flavors are gentler than commercially produced chile sauces, which often overpower dishes with their vinegary taste. Slowly frying the garlic and chile melds their individual flavors, so that when you add a bit of this mixture to food, it doesn’t assault your palate with its boldness. It is particularly good with stir-fry dishes and certain noodle soups. There are different kinds of chile heat, and through practice and experimentation you will learn when to use them.

Honey-Roasted Duck Legs

Few dishes can be at the magnificence of a whole roast duck, a treat that most Vietnamese purchase at Chinese barbecue shops. For an easier at-home version that is just as rich and succulent, I use whole duck legs (thigh and drumstick). They are relatively inexpensive at Asian markets, and they freeze well, which means you can stock up for when you don’t have time to shop. The legs are steamed first, during which most of the fat melts away, and then they are roasted to crisp the skin. Finally, the honey glaze is applied, which puts a lacquer like finish on the skin while the meat stays moist. A simple hoisin dipping sauce adds a little extra sweetness to each bite. Present the duck with Everyday Daikon and Carrot Pickle (page 192) or Tangy Mixed Vegetable Pickle (pages 194) and accompany with a green vegetable stir-fried with just salt and a touch of sesame oil, a light soup such as Creamy Corn and Shiitake Mushroom Soup (page 74), and rice.

Garlicky Fried Chicken with Sweet-and-Sour Sauce

In this dish from my youth, the chicken is marinated and poached before it is battered and fried until crunchy. Poaching the chicken first enables you to deep-fry in less time, yields more tender meat, and mellows the pungency of the garlic. Small pieces of bone-in chicken are traditionally used, but I prefer to fry boneless, skinless thighs for convenience. Rolling the chicken in panko (Japanese bread crumbs) yields a crispy shell that keeps for hours.

Garlicky Oven-Roasted Chicken

Vietnamese cooks roast chickens in three ways: on the stove top in a pan with a little liquid for succulence, over charcoal for charred smokiness, or in the oven for crispy skin. The method mostly depends on the kind of heat source available. For example, ovens were traditionally luxurious home appliances in Vietnam. In 1966, my mom’s oven was a metal box indirectly heated by hot charcoal set underneath and/or on top. When the Americans came, she was able to salvage a modern oven for her Saigon home kitchen. After we arrived in America, Mom delighted in roasting this easy garlicky chicken for our family. With a reliable oven and affordable chicken, we ate ga ro-ti regularly with rice for dinner, sliced up and stuffed into a baguette sandwich (page 34) for lunch or a snack, and arranged atop sticky rice (page 246) for breakfast or lunch. When preparing ga ro-ti (which takes its name from the French term for roasting), use the more succulent parts—drumsticks, thighs, wings—for the best flavor.

Garlicky Noodles with Maggi and Butter

When my family lived in Vietnam, these noodles were considered special because Western noodles (called nui, the Viet phonetic equivalent of the French nouilles) and butter were expensive imports. Once we arrived in the United States, we indulged in them to the point that they were no longer dear. In fact, I forgot about them for years, only to rediscover their garlicky, buttery, nutty goodness at a Vietnamese French restaurant in Westminster, California. Nowadays, I prepare these noodles not just because they are a comfort food from my youth, but also because they are good. The unusually savory quality of the dish is due to Maggi Seasoning, a soy sauce–like condiment and Vietnamese staple that was most likely introduced to Vietnam by the French. It is fine to use dried pasta for this recipe, though fresh fettuccine or even flat Chinese egg noodles yield a superior dish.

Garlicky Preserved Daikon and Carrot

A specialty of Central Vietnam, these preserved vegetables pack plenty of punch in each garlicky, savory, sweet, and crunchy morsel. Served as a small side dish, they are a flavorful addition to any meal and even make a bowl of plain rice satisfying. Traditionally, the vegetables are cut into thick, stubby sticks, salted, and then partially dried outdoors on bamboo trays before they are left to sit in a mixture of fish sauce, sugar, and garlic. Here in the States, the oven speeds up the process considerably. I use small young daikons and large carrots and cut them into rounds instead of sticks.

Red Chile Sauce

The counterpart to Green Chile Sauce (opposite) and a darn good sauce on its own served with meat and fish. Brick red New Mexico chiles give this sauce great color and a deep roasted earthy flavor.

Oven-Baked Pizza

This devilishly good appetizer is an American translation of the Alsatian tarte flambée. The pizza’s thin crust is topped with an unbeatable combination of nutty Gruyère, smoky bits of thick bacon, sweet caramelized onions, toasted slices of garlic, and tangy crème fraîche.

Yucatan-Style Slow-Roasted Pork

Of all the recipes in the cookbook I cowrote with Boston chef Andy Husbands, The Fearless Chef, the one for slow-roasted pork is the one I’m asked for the most. A new round of requests came after my friend Josh and I made it for my own birthday party a few years ago in Washington. We served it simply, with salsa, sour cream, and tortillas on the side, but trust me, this meat can go into all sorts of recipes, such as in Cochinita Pibil Tacos (page 95), Faux-lognese with Pappardelle (page 140), and Pulled Pork Sandwich with Green Mango Slaw (page 121). I’ve simplified this recipe a little from Andy’s original version, cutting out a 24-hour marinating step, replacing the traditional banana leaves with good old aluminum foil, and using one of my favorite smoke stand-ins, Spanish pimenton (smoked Spanish paprika), instead of oregano. The pork is spicy and deeply flavored and colored, thanks in no small part to the large quantity of annatto seeds (also called achiote) that goes into the paste. These little brick-colored pebbles are worth seeking out at good Latin markets or online through such sources as Penzeys.com.

Parsley Garlic Dressing

When I lived in Peterborough, New Hampshire, in the early 1990s, I had two obsessions. The first was the lettuce mix from organic farming pioneer Rosaly Bass, who charmed me so much I signed up for a subscription that let me pick what I wanted off her land all season long. (I tended to swing by at midnight after a long day as editor of the weekly Monadnock Ledger and shovel up carrots by moonlight.) The second was this powerfully sharp dressing, made by chef Hiroshi Hayashi at his elegant, health-minded Japanese restaurant, Latacarta. While Rosaly’s farm is still going strong, Hayashi long ago closed the restaurant and started the Monadnock School of Natural Cooking and Philosophy, but he still makes this vegan dressing. I use it to dress simple salads of butter lettuce with cherry tomatoes and carrots, taking care to slice the carrots into a perfect julienne the way I remember Hayashi did. The dressing also makes an excellent dip for crudités.
