Spring Garlic Risotto

Otherwise known as green garlic and garlic shoots, spring garlic captures the essence of garlic without any harshness or bite. Unlike mature garlic, spring garlic should be featured in recipes that won’t overwhelm the delicate flavor, such as this risotto. Make sure you wash the spring garlic thoroughly to remove any sand.

Carne Cruda with Anchovy and Garlic

Some people will tell you that it’s okay to make carne cruda, known as “steak tartare” in fancy French circles, in a food processor. Sorry, no go. You don’t chop it, pulse it, or otherwise mangle it. You freeze it, slice it, crosscut it, and dice it. Period. Yes, chopping the meat by hand requires patience, but it creates the perfect texture. Freezing the meat beforehand makes this job easier. This is one of those recipes where you must use the very best ingredients you can find—the best olive oil, the best imported anchovies—to take this crudo over the top. Buy the best New York strip or tenderloin you can afford, and tell your butcher how you’re serving the meat to ensure you get the very best. For a light meal, serve with plenty of crusty bread and a small salad.

Crispy Young Favas with Green Garlic Mayonnaise

This cooking method only works with the very first favas of spring—the ones that are thin skinned enough to be eaten whole. Not only is this a light, crunchy, and addictive snack, but it’s also a nice way to enjoy fava beans without all the fuss. For dipping, mild green garlic makes for an aioli that doesn’t overwhelm the favas’ sweet flavor.

Baked Stellar Bay Kusshi Oysters with Garlic Breadcrumbs and Oregano

I love broiling Kusshis not only because they have a lovely, delicate texture and a good brininess, but also because they have deeply cupped shells that hold both liquid and a lot of delicious breadcrumbs. Cherrystone clams would be a great substitute, and Totten Virginica, Barron Point, or Shigoku oysters would also work well, because they are the right size to hold up to the heat. Save tiny Kumomotos for eating on the half shell.

West Tennessee Thick and Sticky BBQ Sauce

Any recipe for barbecue sauce is bound to be contentious, no matter the formula. That’s because there are as many versions of this master sauce as there are Southerners willing to defend them as definitive. Whether thick or runny, tomato-based or vinegar, all Southern barbecue sauces get their complex flavor by playing on the contrasts between spicy and sweet, tangy and smoky. I’m nonpartisan enough to appreciate them all, but of course I’m partial to the western Tennessee strains—one sharp and vinegary, the other sweet and tomato-thick—I grew up on. With tomato, vinegar, and a dash of mustard, this all-purpose hybrid version offers the best of all worlds.

Tomato Aspic

Delicate and shimmering red, molded tomato aspics are the stuff of ladies’ luncheons and afternoon teas, circa 1950. But when fresh tomatoes, garlic, and herbs step in for canned tomato juice, this old-school dish is transformed into a modern summertime must. Serve topped with a creamy dollop of Homemade Mayonnaise (page 280) or Buttermilk Green Goddess Dressing (page 284).

Roasted Chicken with Olives, Lemon, and Garlic

Think there’s no way to improve upon perfectly roasted chicken? Think again. At Herbsaint we would have to appoint someone to guard the pans while these birds cooled, or they would all end up wingless! In this recipe, the addition of rosemary, garlic, lemon, and olives perfumes the meat and suggests a world of accompaniments: steamed artichokes, just-cooked angel hair pasta, fluffy couscous, a salad of pungent greens with crusty bread for sopping up the juices. When it comes to wine, consider serving a rosé or a white from the Rhone valley.

Polenta Gratin with Savory Vegetables

This is what I call a “close your eyes and sigh” dish—one of those fragrant and comforting meals that remind us what makes eating such a soul-satisfying experience. It can be served as a vegetarian entrée or as a side dish with chicken, veal, or lamb. Polenta provides the creamy base that melds alternating layers of cheese and vegetables. During baking, the flavors intermingle, and the fontina and roasted garlic provide a pleasing gooey texture. A simple tomato basil sauce brightens up the mellow flavor of the polenta. The result: a perfect confluence of luscious Italian flavors. If you have never had real Val d’Aosta fontina cheese, this is an excellent time to try it. The difference is noticeable: Val d’Aosta is firm and has a savory, slightly grassy flavor. If you are short on time, forgo the sauce; this polenta is delicious without it.

Garlic Confit

I call this recipe “confit” because, like the French method for preserving meat, it involves slow-cooking the garlic cloves in oil and other liquids. Poaching garlic on the stovetop is an alternative to roasting garlic in the oven. I actually prefer poaching because there is less waste—when the cooking process is complete, you are left with the whole cloves as opposed to squeezing sticky partial cloves out of a softened bulb. As with roasting, this method replaces the sharp heat of raw garlic with a flavor that’s deep and sweet. I usually poach at least two bulbs so I have plenty on hand for antipasto platters, White Bean Hummus (p. 172), pastas, vinaigrettes, or even for slathering on a piece of toast for a snack.

The Best Chimichurri Sauce

Green and pungent, this is my favorite version of the famed Argentinean sauce. For a more traditional version, substitute fresh oregano for the cilantro, and red wine vinegar for the lime juice. Serve it with fat, juicy rib eyes, grilled chicken breasts, or tuna steaks.

Moroccan Charmoula Marinade and Sauce

There are many different versions and interpretations of this exotic mixture, which can be used as a marinade, a sauce, or, with a little more olive oil, a vinaigrette. Use a portion of it to marinate fish or chicken, then grill, and toss the remaining mixture with thinly sliced Vidalia onions and sweet red peppers for a quick summer supper.

Skordalia

Adapted from The Royal Oak Restaurant and Pub. I fell in love with this creamy sauce when I first tasted it back in 1970 at the Royal Oak Pub in New Orleans, owned by Mr. and Mrs. John Newsham. They used to serve it with fried eggplant, and it is one of those texture and flavor combinations that I will never forget: the crisp eggplant nestled into the nutty, garlicky puree (as thick and luscious as butter-cream). Later, when I became a chef, the Newshams were big supporters of my career and even shared with me two of their family recipes, including this one, after Mr. Newsham passed away. I will always be grateful to them for the many food memories, and for their kindness.

Herbed Goat Cheese with Garlic Confit

This silky puree is just one more way to enjoy fresh goat cheese, which is a favorite of mine. It can be served with toasted bread and sun-dried tomatoes for a quick hors d’oeuvre, or paired with a salad of fresh greens for an appealing first course. It’s also irresistible slathered on a turkey or grilled portobello sandwich. This puree is similar to the garlic goat cheese filling for my Eggplant Roulades (p. 303), but the addition of fresh basil, herbes de Provence, and chives gives it a style all its own.

Cream of Garlic Soup

The secret to this soup, a luscious puree of caramelized garlic and onions thickened with French bread, is patience. I originally developed it at Savoir Faire. At the time I had a boyfriend who frequently traveled to Mexico. He would rave about sopa de ajo—a broth flavored with garlic and egg—and it sounded so earthy and scrumptious that I decided to try to make it. My approach to recipe development typically involves looking up several versions of a dish, then taking what I like from each of those recipes. That’s exactly how this soup was created. I trained with French chefs, so a puree leapt to mind. Then I read that in Latin countries soups are often thickened with bread. One version relied on fish stock, but I thought chicken stock would be more universally appealing. So I stirred all my ideas together, my mentor Daniel gave it his enthusiastic blessing, and my first true culinary creation was born. When we initially started making this soup, my dishwashers had to peel 10 pounds of garlic at a time. Thankfully, these days at Bayona, we buy peeled garlic by the gallon. In order to develop the proper deep, rich flavor, it’s essential to take your time cooking the garlic. You need to stir the mixture a lot over low heat and wait until the onions and garlic get very dark and caramelized. I love garnishing this soup with tiny croutons that provide a crunchy contrast to the silky body.

Garlic-Roasted Chicken Breasts

In this dish, the garlic tops serve as a roasting rack for the chicken. The garlic bottoms are then flipped halfway through the cooking time, to soak up the juices. Serve with toasted slices of French bread, if desired.

Focaccia with Tomatoes and Roasted Garlic

What is focaccia really? Is it pizza? Is it bread? Well, it’s a little bit of both. This version of focaccia is definitely a crowd-pleaser. Just stand back and watch people’s eyes light up as they get the zip from the crushed red pepper. That, along with the subtle taste of the roasted garlic, makes this a perfect food to share—just make sure whoever you talk to eats some of it, too.

Pan-Seared Beef Steaks

I often pan-sear steaks Vietnamese style, with lots of garlic, black pepper, and Maggi Seasoning sauce, a favorite condiment of the Vietnamese. Thinly slice the steaks so guests may help themselves with chopsticks, plus the juices released are delicious mixed into a bowl of rice. Or, make the steaks part of a Western knife-and-fork meal (bit-tet is the Viet transliteration of the French bifteck) and serve with crispy fried potatoes instead of rice (see Stir-Fried Beef with Crispy Fried Potatoes, page 140, for guidance on cooking the potatoes).
