Bean-Thread Noodles with Shiitake and Vegetables
The follow recipe is an adoption of "chicken long rice," a frequent accompaniment to roast pig at a luau. Although Chinese in origin, this dish has been enthusiastically adopted by all Hawaiians. "Long rice" refers to bean-thread noodles that are cut into short lengths. We eliminated the chicken traditionally included in this recipe to make it a lighter side dish for our Grilled Teriyaki Pork Chops with Pineapple Papaya Relish .
Can be prepared in 45 minutes or less.

This was a recipe that came from my mother, Rae Horowitz. She told me it was from my Grandma Sade Lyon's recipe and she learned to make it from her.

Spinach adds great color and flavor to these light dumplings. The topping consists of melted butter and Fontina cheese, a product made in the neighboring region of Valle d'Aosta but used for many local dishes.
Orange Currant Noodle Kugel
Kugels are baked puddings that come in many forms; Their base may be noodles, matzo, or bread or cake crumbs; most are sweet but some are savory; and they may be served warm or cold. Traditionally part of Jewish sabbath and holiday meals, slightly sweet noodle kugels are often served as a side dish. The following kugel would also work well as a dessert.
