Ingredients

1 1/2 cups milk
1 1/2 cups strawberry syrup
1 quart strawberry ice cream
Chilled seltzer to taste
Garnish: whipped cream

For strawberry syrup:

1 pound (about 1 1/4 pints) strawberries, hulled and sliced
1/2 cup sugar

Preparation

  1. Make strawberry syrup:

    Step 1

    In a food processor fitted with the steel blade or in a blender in batches, puree the strawberries, transfer the puree to a stainless steel or enameled saucepan, and stir in the sugar and 1/2 cup water. Bring the mixture to a boil over moderate heat, stirring, and simmer it for 3 minutes. Force the mixture through a fine sieve into a bowl and chill it, covered, for at least 3 hours. Makes about 1 1/2 cups

  2. Make the sodas:

    Step 2

    In each of 6 ice-cream soda glasses, combine 1/4 cup of the milk and 1/4 cup of the syrup, add 2 or three scoops of the ice cream to each glass, and fill the glasses with the seltzer. Garnish the sodas with the whipped cream.
