Stir-Fried Baby Carrots

Preparation

  1. Combine carrots in a skillet or stir-fry pan with a little water. Cover and steam for 10 minutes, or until they are just starting to turn tender-crisp. Drain the water and drizzle in a little light olive oil. Add another ingredient or ingredients or your choice: chopped dried fruit, chopped nuts, baby corn, green peas, and so forth. Stir-fry until the carrots are tender-crisp and beginning to turn golden.
