Seasoned Bread Crumbs 4

For a pasta dressing

Ingredients

2 tablespoons extra-virgin olive oil
1 cup bread crumbs
1/2 cup pine nuts

Preparation

  1. Heat the oil in a wide skillet over medium heat. Stir in the bread crumbs and pine nuts and toast them, stirring often, until golden brown. Use the toasted crumbs to dress pastas made with oil and garlic, like the Spaghettini with Oil and Garlic on page 103, or a vegetable sauce, like the Cavatelli with Bread Crumbs, Pancetta, and Cauliflower on page 114. I don’t suggest using them with tomato sauce or any very saucy pasta.
