Ingredients

1/2 cup orange juice
1/2 cup soy sauce
1 teaspoon grated orange zest (peel)
1 teaspoon ground ginger
1/2 teaspoon onion powder
One 3 1/2 pound frying chicken, quartered

Preparation

  1. Combine the orange juice, soy sauce, orange zest, ginger, and onion powder in a large plastic storage bag. Add the chicken, squeeze out excess air, seal tightly, and massage to coat the chicken all over. Marinate in the refrigerator for at least 2 hours and up to overnight. Preheat a broiler or set up a grill. Remove the chicken from the marinade and broil or grill for about 15 minutes a side, until the chicken reaches an internal temperature of 170 degrees and the juices run clear when pricked with a fork.
