Lemon-Ginger Crème Brûlée

When I worked as a pastry chef, I became known as “the crème brûlée bully” because I decided one night that I had had enough of crème brûlée and stopped serving it altogether. The reason? It was all that was ever ordered, and everything else on my menu went ignored. I realize now that I should have been flattered that guests liked my crème brûlée so much, and I apologize to anyone who left the restaurant feeling denied their favorite dessert.
