Honey and Spice Pork

My kids love the sweet and spicy flavors of this meal. The pork together with the potatoes, carrots, and green beans offers a kid-friendly, well-rounded dinner loaded with nutrients and low in fat. Look for boneless center-cut pork loin, 1/2 inch thick. Or substitute a turkey tenderloin, a salmon fillet, or even chicken for the pork.

Ingredients

Canola oil spray
1/2 to 3/4 pound pork tenderloin
Sea salt and freshly ground black pepper
1/4 cup honey
3 tablespoons Dijon or Cajun-style mustard
1/2 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
6 to 8 small new potatoes
2 carrots, sliced into coins
2 cups fresh or frozen cut green beans

Preparation

  1. Step 1

    Preheat the oven to 450°F.

    Step 2

    Spray the inside and lid of a cast-iron Dutch oven with canola oil.

    Step 3

    Put the pork in the pot and lightly season with salt and pepper.

    Step 4

    In a small bowl, mix the honey, mustard, ginger, cinnamon, and cloves and pour over the pork.

    Step 5

    Slice the potatoes in half and add to the pot, then scatter the carrots and green beans over the potatoes.

    Step 6

    Cover and bake for 45 minutes, or until 3 minutes after the aroma of a fully cooked meal escapes the oven. Serve immediately.
