Grape Sorbet

Ingredients

1/3 cup sugar
1/3 cup plus 1/4 cup water
1 1/2 pounds red grapes, preferably Concord
1 1/2 tablespoons lemon juice

Preparation

  1. In a small saucepan over low heat, combine the sugar and 1/3 cup water and cook, stirring, until the sugar dissolves. Set aside to cool. Combine the grapes and the remaining 1/4 cup water in a medium saucepan over medium-high heat. Cook until the grapes start releasing their liquid. Reduce the heat to medium and simmer until the grapes break apart, about 3 minutes. Pass the mixture through a food mill or a fine sieve. Let cool. Stir in the lemon juice followed by the sugar syrup until sweetened to your liking. Refrigerate until cold. Transfer the mixture to an ice-cream maker and freeze according to the manufacturer’s instructions.
