Couscous with Peas, Cashews, and Raisins

Ingredients

1Ā 1/2 cups couscous
2 tablespoons nonhydrogenated margarine
1 cup frozen green peas, thawed and steamed
1/3 cup toasted cashew pieces
1/2 cup dark raisins
Salt and freshly ground pepper to taste

Preparation

  1. Step 1

    Boil 3 cups water. Pour the water over the couscous in a heatproof container. Cover and let stand for 15 minutes, then fluff with a fork.

    Step 2

    Add the remaining ingredients and stir well. If the mixture needs more moisture, stir in a small amount of water, and serve.
