Ingredients: 6 ounces slab bacon, cut into 1/4" pieces; 1/4 cup all-purpose flour; 4 chicken legs (drumsticks with thighs; about 2 pounds); Kosher salt, freshly ground pepper; 1 1/2 pounds mixed mushrooms; 1 medium onion, chopped; 6 garlic cloves, crushed; 1/4 cup dry white wine; 6 sprigs thyme; 2 bay leaves; 8 cups low-sodium chicken broth; 3/4 teaspoons kosher salt, plus more; 1 cup all-purpose flour; 2 teaspoons baking powder; 1/2 teaspoon freshly grated nutmeg; 1/8 teaspoon freshly ground black pepper; 2 large eggs; 1/4 cup whole milk
