Kosher salt
1 small garlic clove, finely grated
1/2 cup extra-virgin olive oil
1/4 cup fresh lemon juice
Freshly ground black pepper
1/2 English hothouse cucumber, chopped
1/2 large fennel bulb, chopped
4 scallions, thinly sliced

    Step 3

Add cucumber, fennel, scallions, tomatoes, mint, parsley, dill, and vinaigrette to bulgur and toss to combine; season with salt and pepper.

    Step 4
